Turkey Burger and Sweet Potato Bites

Turkey Burgers are one of my new-favorite lunch options. I love hamburgers, but there’s a richer flavor to turkey burgers. It complements the taste of sweet potatoes perfectly. This is another recipe that is 21 Day Fix and 80 Day Obsession approved. One turkey patty, 2 leaves of lettuce, two slices of tomato, one slice of onion, and 1/2 a cup of sweet potato bites are portioned for plans A, B, and C’s post-workout meal. To modify it for plans D, E, and F, add a second patty, a serving of 2% plain Greek yogurt, or 2% cottage cheese.

If you don’t like sweet potatoes – but seriously, who doesn’t?? – you can substitute a slice of whole-grain, sprouted bread to use as a bun or you could include 1/2 cup of cooked, whole-grain pasta.

You’ll notice the image for this post doesn’t contain the vegetables listed in the recipe. That’s because life happens, and sometimes, the tomatoes you have saved for the awesome picture you want to take get eaten. Rather than give up and scrounge for a different meal, I improvised with 1/2 cup snow peas and 1/2 cup cherry tomatoes. As long as you have the equivalent of 1 cup of vegetables, you’ll remain within the boundaries of the plan.

Portion container information: 1 green, 1 red, 1 yellow, and 1 tsp.

For the turkey burger
  1. 4 oz ground turkey
  2. 2 leaves lettuce
  3. 2 slices tomato
  4. 1 slice onion
  5. 1/2 tsp olive oil
  6. 1/4 tsp Tajín®
For the Sweet Potato Bites
  1. 1/2 cup chopped sweet potatoes
  2. 1/2 tsp olive oil
  3. 1/2 tsp paprika
Instructions
  1. Mix the ground turkey and Tajín® and form a patty.
  2. Add olive oil to a pan on medium heat.
  3. Heat 3 - 4 minutes on each side or until done.
  4. Preheat oven to 450 degrees.
  5. Chop sweet potato into cubes and toss with olive oil and paprika.
  6. Place on a baking dish and bake for 20 minutes.
  7. Let cool.
