Quick and Easy Recipes (80 Day Obsession Approved)
Not all recipes require a long explanation. If you’re looking for a few quick, no-nonsense recipes to get through the day, look no further. As always, you can put your own spin on these or make them as they are. I’ll list the portion container equivalents in case you’re participating in 21 Day Fix or 80 Day Obsession. If you’re not, they’re still good recipes to have in your back pocket.
Turkey and Bacon Wrap
1 tortilla – 1 yellow
3 slices turkey – 1/2 red
2 slices turkey bacon – 1/2 red
1 cup cucumbers, diced – 1 green
Wrap turkey, bacon, and 1/2 cup of cucumbers in the tortilla. Use the remaining cucumber as a side.
Strawberry Chicken Salad
1 cup spinach – 1 green
3/4 cup chicken, cubed – 1 red
1/2 cup strawberries, sliced – 1/2 purple
1/2 cup apples, chopped – 1/2 purple
balsamic dressing – 1 orange
feta cheese – 1 blue
Season chicken as desired. I used Sriracha Black Pepper seasoning. Combine all ingredients and enjoy. Chicken can be excluded to use this for Meal 2 rather than Meal 3.
Tuna Sandwich
lettuce (2), tomato (2), onion (1) – 1 green
3/4 cup tuna – 1 red
1 slice bread, whole-grain, sprouted – 1 yellow
mayo – 1 tsp
Combine tuna and mayo. Place on bread and cover with lettuce, tomato, and onion.
Scrambled Eggs and Oatmeal
1 cup spinach and mushrooms – 1 green
2 eggs, scrambled – 1 red
1/2 cup oatmeal – 1 yellow
almond butter – 1 tsp
Saute spinach and mushrooms over medium heat. Add eggs and scramble.
Mix the almond butter in the oatmeal.
Sausage and Beans
3/4 cup sausage, chopped – 1 red
1/2 cup brown rice – 1 yellow
1 cup green beans – 1 green
Spicy mustard goes well with this dish. Broccoli or Brussels sprouts could be substituted for the green beans.
