Applesauce & Berry Parfait (with Chocolate!)
My meal planning has been non-existent this week. Perfect for developing a new parfait for week 2 of Phase 2, right?
Let it not be said that I don’t do things as ass-backwards as humanly possible.
Yesterday afternoon, I prepped my dirty carbs for Refeed Day. I didn’t plan the rest of the meals to complement them. Normally, I’d just saute some veggies and eggs to go with the Baked Donut Holes, but the amount of food we eat on Refeed Day is different than a regular day. Instead of the normal green, red, yellow, tsp for the pre-workout meal, we get the addition of a fruit to savor!!
I vowed to not waste this opportunity.
Our refrigerator is in the cleaning out stage meaning we’re using the last of the random ingredients leftover from various meals. It happens every few weeks, and has allowed me to develop some of my favorite recipes. There was just enough plain yogurt and berries to create a parfait. The ratio of red (3/4 cup) to purple (1 cup) containers was off, and I didn’t want the taste of blackberries to overpower the yogurt. Rather than use an entire cup of berries, I used 4 ounces of berries and layered it with 4 ounces of unsweetened applesauce and the yogurt. A tsp of cacao nibs went on top. I’m pleased to say the creation is a success. A fruity, healthy success.
Portion container information for this recipe is: 1 supplemental yellow (dirty carb), 1 purple, 1 red, 1 green, and 1 tsp.
Place half the yogurt in the bottom of a mason jar or cup.
Cover with half the applesauce and berries.
Layer remaining yogurt, applesauce, and berries.
Top with cacao nibs.
Pair with a cup of chopped broccoli and a single Baked Donut Hole.
