Greek Salad

Feta cheese really saved my ass from eating nothing but hummus for my mid-day meal. Don’t get me wrong – I love hummus. I could swim in it and be happy. But if I was forced to eat it every day for 80 days, those feelings of love and adoration would turn to bitterness and hate. Rather than enter into an unhealthy loathing for chickpeas, I decided to sub in a Greek Salad every few days to liven things up.

You know you’re livin’ la vida loca when kalamata olives “liven things up.”

This Greek Salad is, of course, 21 Day Fix and 80 Day Obsession approved. You can mix-and-match the containers to fit your needs. The vegetables equal 1 green, the feta cheese is 1 blue, kalamata olives are 1 orange, and if you’re feeling feisty, you can add 1/2 a cup of mango for 1/2 purple.

Ingredients
  1. 1/3 cup cucumber
  2. 1/3 cup cherry tomatoes
  3. 1/3 cup red onion
  4. 1/4 cup jalapeño
  5. 2 Tbs kalamata olives
  6. 1/4 cup feta cheese
Instructions
  1. Chop the vegetables and olives.
  2. Toss with the feta cheese.
Notes
  1. Jalapeños are considered a "free" food, so you can add as much or as little as you like.
