Double Chocolate Cookies

Double Chocolate Cookies are one of the 80 Day Obsession approved foods from the Fixate cooking show. It was my favorite of the treats from our first Refeed Day. They look like the really gooey cookies you get from the bakery at Dillon’s without all the processed garbage in them.

Processed garbage is delicious, I know. Most of us will never fully remove it from our diets. It is what it is. Taking steps like baking your own, healthier cookies helps reduce the amount of garbage we consume. Baby steps, folks. Baby steps.

These Double Chocolate Cookies count as 1 dirty yellow for 80 Day Obsession and 1 yellow for all other programs that follow the portion control system.

Ingredients
  1. ¼ cup coconut oil, melted
  2. ½ cup unsweetened applesauce
  3. 1⁄3 cup pure maple syrup
  4. ¼ cup canned lite coconut milk
  5. 1⁄3 cup coconut flour
  6. ¼ cup whole wheat flour
  7. ½ cup unsweetened cocoa powder
  8. ¼ cup dark chocolate chips
Instructions
  1. Preheat oven to 350° F.
  2. Lightly coat baking sheet with nonstick cooking spray. Set aside.
  3. Combine oil, applesauce, maple syrup, and coconut milk in a medium bowl; mix well. Set aside.
  4. Combine and mix flours and cocoa powder in a small bowl; add to applesauce mixture until well blended.
  5. Mix in chocolate chips.
  6. Drop by rounded Tbsp. onto prepared baking sheet.
  7. Bake for 10 to 12 minutes or until firm.
Notes
  1. You can either substitute chopped pecans, almonds, or walnuts for the chocolate chips OR use fewer chocolate chips and add the chopped nuts to the existing recipe.
