Burrito Bowl

A burrito bowl is one of the most versatile, quick-and-easy meals you can make. When it’s time to clean out leftovers in the fridge, burrito bowls are there. When you have a hodge-podge of ingredients in the cabinet, burrito bowls are there. There’s really nothing these delectable dishes can’t accomplish, and they’re super cheap to make!

We have Dillons grocery stores in our region, and they constantly have pre-sliced vegetables on clearance. Same with ground turkey. Eating healthier foods hasn’t quite caught on here, and I reap the benefits.

You can modify this recipe to fit any meal plan you’re on. If you need fewer carbs, use either less brown rice and beans or choose one. If you need more protein or vegetables, add them! I cover mine in a few teaspoons of salsa, but you an use shredded cheese, guac, yogurt, or whatever makes your little heart happy.

Ingredients
  1. 1 lb ground turkey
  2. 2 tsp Season All
  3. 2 tsp chili powder
  4. 1 green bell pepper
  5. 1 red bell pepper
  6. 1 white onion
  7. 1 tsp olive oil
  8. 1 can black beans
  9. 1 cup brown rice
  10. 2 tsp salsa
Instructions
  1. Place 1 cup brown rice and 2 cups water in an Instant Pot. Cook for 13 minutes. (Can be boiled on the stove top as well.)
  2. While rice is cooking, season turkey with 1 tsp Season All and 1 tsp chili powder. Crumble and brown until no longer pink in the middle.
  3. Set turkey aside.
  4. Slice bell peppers and onions.
  5. Season with remaining Season All and chili powder and saute with 1 tsp olive oil for 3 minutes.
  6. Add black beans. Cover pan and steam for 5 minutes or until vegetables soften.
  7. Combine ingredients and top with salsa. Enjoy!
Notes
  1. I make a large batch then combine ingredients according to my needs. If I need one serving of protein, two carbs, and two vegetables, I'll portion out the black beans prior to adding them to the pan and save the rest for the next time I have the meal. Same with the turkey. I cook it all in advance then add it in as desired.
